Protein Pancakes

April is here! I thought about taking a month hiatus from the ol’ blog because of the craziness that will ensue this month, however I just can’t leave! My posts won’t be as consistent this month but I will try my best. Posting recipes keeps me grounded as weird as that may seem. It motivates me to prepare fresh foods which ultimately makes me feel great inside 🙂

This month our business Smarty Pants Yoga Inc. launches, I graduate from yoga school, I am being honored in NYC, and we go to Florida for my sister’s wedding. The day we return we move and my students are competing in a city-wide competition. I am SO excited for all of the madness, and am trying to take each day as it comes.

To get me through I need to make sure I maintain a healthy diet. I am not eating any processed food or sugar and am making meals instead of snacking on nuts or dried fruit (a deliciously bad habit). To kick off the month of healthy everything I present protein pancakes (my new obsession). They are packed with healthy ingredients and super easy to make. Plus they are gluten free! Yay for pancakes!

Ingredients:

  • 1/4 c egg whites
  • 1 scoop vanilla protein powder
  • 1 tsp cinnamon
  • 1 tbsp chia seeds
  • 2.5 tbsp vanilla almond milk
  • 1/2 mashed banana

  • Berries
  • PB2
  • Sugar Free Syrup

1. Mash banana in bowl.

Leave no lumps

2. Place all ingredients in shaker cup. Place banana last.

3. Shake ingredients until evenly distributed.

4. Grease (coconut oil, PAM) non stick pan on medium heat. Pour mixture into pan. When it begins to bubble flip.

5. Cook thoroughly and serve!

For Real the Best Smoothie…EVER

I know each time I post I set up the recipe with “This is the best!” For real though, this smoothie is the best.

I ADORE my fellow yogis. Two weeks ago we had “Smoothie Sunday.” Smoothie Sunday was a magical affair that involved smoothie samples. A few of us brought our favorite shake to share! The combo that won my heart involved cinnamon. Two classmates used cinnamon in their shakes and my world changed.

One of my classmates brought an amazing smoothie that combined dates, cinnamon, and banana. That’s right… heaven. I’m sharing this recipe with the world because WORLD YOU DESERVE IT. Thank you Marvin for enlightening my taste buds. I of course changed it up to make a green smoothie, got to get that spinach in!

Cinnamon Date Green Smoothie

Ingredients:

Plus spinach

Plus spinach

1 tsp cinnamon
8 ice cubes
1.25 c of vanilla almond milk
1 banana
3 dates (pitted)
1.4 c of cold water
2 c of spinach

Directions:

Place ice in blender and pulse.
Remove pits from dates

Gluten Free Granola Goodness

I love granola. I actually love being gluten free. I love gluten free granola… go figure.

Recently I have been purchasing a ton of granola for Stephen and I must say it is delicious  However, the brand we like is pretty pricey (6.99 for a small bag). Lets be real… this post isnt about being frugal. I miss making granola, so you guessed it… I made some! I made a batch Saturday night and sadly burned it. I re did the recipe this evening and had much better luck.

In regards the ingredients I need to confess I LOVE chex. I have always been a fan but since I have learned that they are gluten free my love for them has deepened. Naturally I used chex in my granola and as you might have guessed… its the jam.

I feel I should put a disclaimer in. I didn’t really eat ceral growing up because I detested milk. Eating dry cereal is great but it does not compare to the greatness that is soaked cereal pieces in cold milk. I am incredibly biased towards all granola and cereal based foods now. My deprived childhood has led to an adult life filled with cereal addiction. WHEN WILL THE MADNESS END?!!?

Gluten Free Cinnamon and Chocolate Granola (aka Heaven)

.5 c= 1 serving

Ingredients:

2 c cinnamon chex cereal
1 c gluten free oats
1.5 tbsp honey
.5 c organic apple sauce
1.5 tsp cinnamon
100 calorie package of cinnamon almonds
1/4 bar 365 dark chocolate with coconut

Directions:

  • Preheat oven to 350
  • Place oats and chex in bowl. Mash chex with potato masher. Transfer to baking dish and heat for 5 minutes.

  • Meanwhile in a small bowl mix together honey, cinnamon, and apple sauce.
  • Remove oats from tray and evenly mix honey mixture into batter. *The key is to evenly coat the oat mixture

  • Place in oven for 10 minutes- flip mixture- cook for an additional 7 minutes. Make sure to monitor.
  • Remove from oven and place in open air until cool. Place in sealed container and store. YUM!

Great over yogurt, cereal, or as a snack. You can even use this to make bars!

The perfect green smoothie

I have quite a few cook books sitting on my shelf that I rarely touch. One of the cook books I own I purchased years ago when I began to shift how I consume food. Hungry Girl takes ordinary brands and manipulates their purpose to create a “healthy” alternative. I admire their effort and creativity, however its not really my thing. Most of the recipes require too much fake sugar or processed items. With that being said, I was looking through the pages and noticed how they utilized diet hot cocoa mix in multiple recipes. This idea got me thinking and the result of those thoughts is what I would like to think of as perfection.

Chocolate Peanut Butter Banana Protein Smoothie

Ingredients:

  • 1/2 c cold water
  • 5 ice cubes
  • 1/2 c unsweetened vanilla almond milk
  • 1 scoop of 365 vanilla whey
  • 2 tbsp pb2
  • 1 diet hot cocoa mix (25 calorie mix)
  • 1 banana
  • 2 c of spinach

Directions:

Place liquids, banana, and powders in blender. Top off mixture with spinach and place in liquefy setting. Blend until completely smooth and mixture becomes frothy. Serve and enjoy!

Later than Brunch… Breakfast

Winter Break has been very kind to me. We have slept in, been to two wine tastings, and visited the Nutcracker. I also began my 200 Yoga Alliance Training program and have started logging my hours. I am super excited about all of this!

One of the most amazing things about break is staying up late and sleeping in. I love waking up to a clean house, having a fresh pot of coffee and pastry at mid day. It is a spectacular feeling to be free.

As of late I have been inspired by our wedding and France… maybe it’s the wine.. maybe it’s the crepes. Anyways I have wanted to eat breakfast pastries and thus I whipped up some scones yesterday (I am aware this is not French). I adapted this recipe, added protein and made it vegan. I love using fresh and in season fruit. Recently, organic oranges have been super affordable and delicious!

Cranberry Orange Protein Vegan Scones

Ingredients:

  •  1 1/4 cups  whole wheat flour
  •     1/2 cup brown sugar
  •     1 teaspoon baking powder
  •     1 teaspoon baking soda
  • 365 Vanilla Whey Protein Powder (1 scoop = 1 serving)
  •     1 teaspoon cinnamon
  •     1/2 cup unsweetened almond milk
  •     1/2 cup applesauce
  •     1 teaspoon vanilla
  •     1 cup oats
  •     1/2 cup dried cranberries
  • orange zest

Orange Cream Cheese Glaze (not so vegan):

  • 4 tbsp of powdered sugar
  • orange zest
  • 2 tbsp of reduced fat cream cheese (if you want to make the frosting vegan sub out with Tofutti cream cheese)

Directions:
Preheat oven 375 degrees F and spray a round cake pan with Pam for Baking.
Stir together flour, brown sugar, baking powder, baking soda, protein powder and cinnamon.
Make a well in the center and stir in  almond milk, applesauce, and vanilla.
Mix well and fold in oats. Stir in cranberries and orange zest.
Spread batter into prepared pan, and flatten so it looks like a cookie cake. Bake for 18 minutes, then cut into 8 pieces when done.
Bake for 18 minutes, or until a toothpick inserted in center comes out clean.

The Green Monsta

My delightful husband is being a wonderful partner and helping me maintain the healthy yogi lifestyle I enjoy 🙂 We have been drinking Green Smoothies each morning and I must admit… I feel wonderful! The amazing thing about these smoothies is the lack of spinach taste. You only taste the fruit but reap all of the benefits of the greens (benefits listed at bottom of post).I have consumed more greens this week than I have in quite sometime. I have had a smoothie in the morning and spinach and kale salad for lunch. My body is very happy with my choices.

Annie’s Green Monster Smoothie

  • 1 scoop of whey vanilla protein powder
  • 1 1/2 cups of spinach
  • 1/2 cup of baby kale
  • pb2 (can be purchased at Wholefoods)
  • 6 ice cubes
  • 1/2 c of water
  • 1/2 frozen banana
  • 1 tbs flaxseed

Place all ingredients into blender and liquefy.

  • 1 orange
  • 1 apple
  • 1 banana
  • 1 1/2 c of spinach
  • 1/2 c of baby kale
  • 1 tbs flaxseed
  • 1/4 c of water
  • ice cubes

Place all ingredients into blender and liquefy.

According to the research we have conducted, Green Smoothies are great for your metabolism, digestion, and provide you with an insane amount of vitamins. Since the greens are already pulverized your body can absorb the nutrients faster which allows you to benefit quicker. Further it helps regulate your digestion and gives you a ton of nutrients that we often don’t get on a regular basis (i.e. vitamin K). These smoothies also help your skin, hair and nails.

bake and viola! We made chocolate icing to top off these guys. Super delicious.

My new granola is made with a peanut oil mixture. Its very sweet and delicious.
